DCA Benchmarks: Cheese commentary week 3

DCA cheese benchmarks were mixed in week 03, with firmer foil and mozzarella prices offset by softer specialty and cheddar values.In foiled cheeses, Edam (NWE) moved up to € 3055 (+50) and Gouda (NWE) increased to € 3075 (+15); both benchmarks recorded a standard deviation of 1,5%. In the same segment, Frau Antje (NWE) followed Gouda and strengthened to € 3155 (+45), showing a slightly wider spread (sDev 1,6%).Mozzarella (EU) increased to € 3005 (+50) and displayed a slightly higher dispersion (sDev 2,0%) than the foil segment. Meanwhile, the European cheddar market weakened slightly, with Curd (EU) at € 3230 (-20) and sDev 1,2%, and Mild (EU) at € 3300 (-20). Moreover, for cheddar Mild, all inputs were reported at the same level this week, resulting in sDev 0,0%.Within ripened & specialties, Emmentaler (EU) rose to € 3725 (+25) and posted one of the higher volatility readings (sDev 4,3%), with reported values ranging from € 3450 to € 3900. Maasdam (NWE) was unchanged at € 3600 and showed sDev 0,0%. Naturally ripened cheese (NWE) also held at € 3850, but with a relatively elevated dispersion (sDev 4,3%), reflecting a range of € 3550–3850. The week’s largest move came from Cagliata (NWE), which fell to € 3290 (-110) and showed the widest spread (sDev 5,9%).
