In a competitive market, a price is determined by the interaction between supply and demand. That is at least one of the basic principles of economics they once tried to teach us. In the potato processing market, this theory did not seem to apply in recent months. In fact, a lower price seemed to stimulate demand. This changes when we look at the latest processing figure.
